ANS Olivra Organic Quinoa can be used in everyday Indian cuisine including quinoa vegetable pulao, quinoa upma and even quinoa idlis. It can also be used in breakfast porridge, soups and salads, or even milled into flour to make homemade quinoa rotis and baked goods.
Mediterranean Quinoa Salad
quinoa and brown rice blend2 teaspoons olive oil1 teaspoon salt1/4 teaspoon oregano1/2 teaspoon chili flakes1 large cucumber3 tomatoes1/2 onion, diced1/2 cup sliced black olives1/4 cup fresh basil
Bring the water, oil and salt to a boil. Stir in the quinoa and brown rice. Lower the flame and simmer, uncovered, until the water has absorbed and the grains are tender. Remove from heat and allow to cool down
In a large mixing bowl, combine the cooled grains, chopped veggies, feta, and basil. Toss to fully combine. Drizzle in as much or as little of the vinaigrette as you’d like and season with dried oregano and chili flakes. Serve cold or at room temperature. Will keep in the fridge for up to 2 days.
This also happens to make for a great simple lunch with a few slices of pita bread or even pita chips! I sometimes don’t like to eat a heavy lunch, especially during the day when I’m working so this is my go-to lunch on days when I just want something healthy and light to snack on!
