It’s one of the most valuable processed nuts traded on the global commodity markets and is also an important cash crop. Kerala is the second largest cashew nut producer in India and most of the cashew processing units are concentrated in Kollam district. Thus, Kollam rightfully earned the title “Cashew Capital of the World”.
The reason that cashews are expensive is because they grow individually on a apple like fruit and must be removed manually. Cashew nut processing includes roasting, removing the shell, extracting oil from the shell, peeling the kernel, selecting and packing the nuts according to quality and grade.
